Keto Bacon Egg and Cheese Bites Recipe

I’ve never cooked. I think pre-meal preparation usually involves making the same dish or preparing several frozen meals every day, and it won’t taste good after reheating. In addition to preparing meals, I’d also like to put some delicious meals in the fridge, usually breakfast, to make life easier.

Something like this is absolutely perfect, these bacon eggs and cheese bites are great. It’s fast and simple and contains 6 very basic keto-based ingredients. Since the taste and texture of eggs are not overwhelming, they can be beautifully reheated and serve beautiful breakfasts or even lunches.

I use this recipe. I think they are saviors, because nothing sticks, and an egg bite pops up. This leaves 24 very small pancakes with crunchy bacon and lots of cheese.

I like to use a mixture of cheddar cheese and pepper jack for a little spice, but I can choose which one I like. These small bites can produce 1.4 grams of carbohydrates and 0.6 grams of fiber, so each bite can net 0.8 carbohydrates!

Ingredients

  • 1 cup chopped cooked bacon (5-6 thick slices)
  • 1/3 cup coconut flour OR almond flour (nutrition is calculated with coconut flour)
  • 1/2 teaspoon baking powder
  • 1 1/4 cup cheese (I like to do a combination of cheddar and pepper jack)
  • 2 ounces cream cheese, softened
  • 4 large eggs

Instructions

  • Preheat oven to 350 degrees
  • In a medium size mixing bowl combine all of the ingredients, make sure to break up the cream cheese as you stir.
  • Allow the mixture to sit for 10 minutes for the flour to absorb some of the moisture. DO NOT SKIP THIS STEP
  • Spray a regular mini muffin pan or use a silicone muffin pan (my recommendation) and fill each cup about 3/4 full.
  • Bake 15-18 minutes until golden brown and cooked through.
  • Makes 24 mini muffins
